Lite Strawberry Frozen Yogurt Recipe

This Lite Strawberry Frozen Yogurt Recipe is bursting with the delectable flavor of strawberriesLow in calories and fat... a dieter's delight. So smooth and creamy you'd never guess.

Strawberry Frozen Yogurt

Makes about 1 quart (litre).  Serves 6

Ingredients

  • 1/4 cup nonfat milk
  • 2 tablespoons nonfat dry milk
  • 1 tablespoon sugar
  • 1 teaspoon unflavored gelatin
  • 2/3 cup nonfat milk
  • 1 cup fresh or frozen unsweetened strawberries
  • 2/3 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup nonfat plain yogurt, stirred


Directions

In small mixer bowl, combine 1/4 cup nonfat milk with nonfat dry milk; stir until dry milk dissolves.  Place mixer bowl and beaters in refrigerator-freezer until ice crystals begin to form around edge of milk (about 30 minutes).  Remove mixer bowl and beaters from freezer; beat at high speed until soft peaks form; refrigerate.  In small saucepan, sprinkle gelatin over 2/3 cup milk; let stand 1 minute.  Cook and stir over very low heat just until gelatin dissolves.  Remove from heat; set aside.  In blender or food processor, purée strawberries with 2/3 cup sugar until sugar dissolves.  In medium bowl, combine strawberry purée, gelatin mixture, vanilla extract and yogurt.  Fold whipped milk into strawberry mixture.  Freeze in ice-cream maker according to manufacturer's directions; or follow the refrigerator-freezer instructions.

Low Sugar Strawberry Yogurt

Makes about 1 quart (litre).

Ingredients

  • 1 cup fresh or frozen unsweetened strawberries
  • 4 (1 gram) packets Stevia or to taste
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup plain low fat yogurt, stirred
  • 1 egg white
  • 1/3 cup nonfat dry milk
  • 1/3 cup cold water


Directions

In blender or food processor fitted with metal blade, combine berries, sweetener and sugar.  Process until berries are finely chopped.  Stir in vanilla and yogurt.  In medium bowl, beat egg white, nonfat dry milk and water until stiff but not dry.  Carefully fold into berry mixture until smooth.  Freeze in ice-cream maker or follow refrigerator-freezer method.
