Ham And Cheese Muffins
~ Great for Lunch ~

A meal in a muffin!  Ham and cheese muffins are great for lunches and the lunchbox.  Ham, cheese, green onion and basil make these flavorful and filling.

Ham And Cheese Muffins

Makes 12 ham and cheese muffins


  • 2 cups all-purpose flour (500 ml)
  • 1/2 cup sugar (125 ml)
  • 1 tablespoon baking powder (15 ml)
  • 1½ teaspoon baking soda (7 ml)
  • 1 cup plain yogurt (250 ml)
  • 1/2 cup melted butter (125 ml)
  • 2 eggs, beaten
  • 1 cup mozzarella or cheddar cheese, shredded (250 ml)
  • 1/2 - 1 cup cooked ham, chopped (125-250 ml)
  • 4 tablespoons green onions, chopped (60 ml) (modification)
  • 1 teaspoon basil (measure then rub into mixture) (5 ml)


In a large bowl, stir together the flour, sugar, baking powder and baking soda.  In a small bowl, thoroughly combine the yogurt, butter and eggs.  Add all at once to dry ingredients; stir just until moistened.  Quickly fold in the cheese, ham, green onion and basil.  Divide batter evenly among 12 large, greased muffin cups.  Bake at 400°F (200°C) for 18-20 minutes.  Serve warm.  Store muffins in the refrigerator.
