Fresh Apricot Frozen Yogurt

Apricot Frozen Yogurt

Fully ripe apricots give the most intense fruit flavor.

Makes about 1 quart (litre)

Ingredients

  • 3 large ripe fresh apricots, pitted and coarsely chopped
  • 1/4 cup cane sugar 60 ml
  • 1/4 cup light corn syrup 60 ml
  • 1 tablespoon lemon juice 15 ml
  • 1/8 teaspoon almond extract 0.75 ml
  • 3/4 cup low fat milk 180 ml
  • 2 cups plain low fat yogurt 500 ml, homemade or commercial


Directions

In a blender or food processor, combine apricots, sugar, corn syrup, lemon juice and almond extract.  Process until apricots are finely chopped.  Stir in milk and yogurt.  Freeze in ice-cream maker or follow refrigerator-freezer instructions

Classic Banana Frozen Yogurt

Banana Frozen Yogurt

Classic banana is always a favorite.  Lemon adds an extra burst of flavor.

Makes about 1 quart (litre)

Ingredients

  • 2 medium bananas, peeled and quartered
  • 1/4 cup cane sugar 60 ml
  • 2 tablespoons honey 30 ml
  • 2 tablespoons lemon juice 30 ml
  • 1/2 cup low fat milk 125 ml
  • 2 cups plain low fat yogurt 500 ml, homemade or commercial


Directions

In a blender or food processor, combine bananas, sugar, honey and lemon juice.  Process until bananas are puréed.  Stir in milk and yogurt.  Freeze in ice-cream maker or follow refrigerator-freezer instructions
