Piña Colada Frozen Yogurt Recipe

This is a perfect summer dessert. Don't have an ice-cream or frozen yogurt machine? There are methods to make frozen yogurt without a machine... all you need is a freezer.

Serves 6

INGREDIENTS

2 cups low fat plain yogurt 500 ml
8 ounces crushed pineapple 250 gm
16 ounces canned cream of coconut 500gm
1 ripe banana
2 tablespoons rum or rum flavoring (optional) 30 ml
garnish: toasted coconut and crushed pineapple (optional)

DIRECTIONS

Combine all ingredients, except garnish, in a blender or food processor. Process until smooth. Freeze in your ice-cream machine or by freezer method.

Garnish with toasted coconut and pineapple when serving.

Sunburn Remedy

Apply plain yogurt directly to the burned area. Leave on 45 to 60 minutes. Rinse off. Repeat if necessary.

For added relief and healing, mix echinacea in yogurt before applying. Echinacea tea bags can be opened and emptied.
